Black Bean Chicken

Ingredients

Marinade:
  • 6 chicken breasts, sliced into strips
  • 40ml corn flour
  •  200ml honey
  • 1 thumb sized piece of ginger, roughly chopped
  • 4 garlic cloves, crushed
  • 100ml soy sauce
  • 50ml peanut oil
  • Handful coriander, chopped

Stir-fry:

  • Peanut oil, for frying
  • Dried chillies, to taste
  • 100ml black beans, finely chopped
  • 1 red onion, thinly sliced
  • 2 leeks, thinly sliced
  • 2 red peppers, thinly sliced
  • 30ml sesame seeds, toasted
  • 5 spring onions, thinly sliced

Method

Mix all the ingredients for the marinade and let it stand for 15-20 minutes.

Heat the oil in a wok with the drained chillies until fragrant, then strain out the chillies.

Heat your Mellerware electric frying pan to the highest heat, add a little oil and start off by frying the black beans then add the onions, leeks and peppers.  Fry until softened and remove from the pan, into a bowl.

Return the pan to the heat with some oil and start frying the chicken in batches
in order to brown it nicely.  When the chicken is half-cooked, add the stir-fry ingredients, sesame seeds and spring onions and heat through until done. 

Serve with egg-fried rice.

Brown English Stew

Ingredients

  • 700grams beef cubes for stewing
  • Flour
  • Salt and pepper
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1/2 teaspoon allspice
  • 1/2 teaspoon paprika
  • 1 teaspoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoons Worcestershire sauce
  • 2 cups tomato juice
  • 1 1/2 cups water
  • 4 small onions, quartered
  • 1 1/2 cups diced potatoes
  • 3 medium carrots, diced
  • 3/4 cup diced celery

Method

Dredge meat in seasoned flour. Heat oil and garlic in electric frying pan at maximum. Add meat and brown well. Turn heat control down. Add paprika, allspice, sugar, lemon juice, Worcestershire sauce, tomato juice and water. Cover and simmer 1.5 hours or until meat is tender. Stir occasionally, adding more water if necessary. Add onions, potatoes, carrots and celery. Cover and cook 15 minutes or until vegetables are tender.

 


Chicken Casserole

Ingredients

  • 6 chicken breasts, skinned & deboned
  • 1/4 cup oil
  • 1 bell pepper
  • 1 large onion
  • 1 can tomatoes with green chilies
  • 1 can cream of chicken soup
  • 1 small can tomatoes
  • Salt & pepper
  • Angel hair pasta or rice
     

Method

Brown chicken in electric frying pan in oil. Slice peppers and onions in rings. Add to frying pan, cover and simmer for about 10 minutes. Stir in other ingredients, except pasta. Simmer on low heat until chicken is tender.
Serve over pasta or rice.
